Piccalilli Relish

Ingredients

14 Lb Green Tomatoes

2 lg. White Onions

1 c. Salt

3 qt. Apple Cider Vinegar

2 lb. Light Brown Sugar

2 lb. White Sugar

1 Teas. Cloves

1 Teas. All Spices

1 Teas. Cinnamon

1 Teas. Nutmeg

  1. Grind Tomatoes in Processor

  2. Put Ground tomatoes in a large bowl

  3. Sprinkle 1 c. Salt over the Ground Tomatoes and place in Refrigerator overnight

  4. Next Day: Rinse Tomatoes under Cold Water thoroughly & Drain

  5. Add Ground Tomatoes to a large pot

  6. Add 2 qt. Water to pot

  7. Add 1 qt. White Vinegar to pot

  8. Mix and Boil Mixture for 1/2 hour

  9. Drain all liquid from mixture

  10. Add 2 qt. Apple Cider Vinegar to mixture

  11. Add 1 pt. Water to mixture

  12. Add 2lb Brown Sugar to mixture

  13. Add 2 lb. White Sugar to mixture

  14. Add 1 Teas. Cloves, 1 Teas. All Spice, 1 Teas. Nutmeg and 1 Teas. Cinnamon to Mixture

  15. Simmer for 4 hours until mixture is thick on top and watery on bottom, stir occasionally.

  16. Pack Relish into hot jars using 1/2 inch head space.

  17. Water Bath for 10 min.
