Zucchini Chocolate Cake

Ingredients

1/2 c. Soft Margarine

1 3/4 c. Sugar

1 Teas. Vanilla

2 1/2 c. Flour

4 Tbl. Cocoa

1/2 Teas. Baking Powder

1/2 Teas. Cinnamon

1 Teas. Baking Soda

2 c. Grated Zucchini

1/2 c. Vegetable Oil

2 lg. Eggs

1/2 c. Sour Milk

(1/2 c. Milk & 3 Teas. White Vinegar, let sit 5 min.)

3/4 - 1 c. Semi Sweet Chocolate Chips

Cook Time: 40-45 min.

Prep & Cooking Instructions

Start by Mixing 1/2 c. Milk with 3 Teas. White Vinegar, set aside to sour for 5 min

Shred 2 c. Zucchini

Measure out 3/4 c. Sugar, add to a large mixing bowl

Measure out 1/2 c . Vegetable Oil, add to bowl

Add 1/2 c. Soft Margarine to bowl

Beat mixture until thoroughly combined

Add 2 lg. Eggs to mixture

Measure out 1 Teas. Vanilla Extract, add to bowl

Add sour milk to bowl

Beat mixture until a cream is formed

Measure out 2 1/2 c. Flour, add to a separate bowl

Measure out 4 Tbl. Cocoa, add to bowl

Measure out 1/2 Teas. Cinnamon, add to bowl

Measure out 1/2 Teas. Baking Powder, add to bowl

Measure out 1 Teas. Baking Soda, add to bowl

Whisk dry ingredients to break up any clumps

Add wet ingredients to dry ingredients

Add Zucchini to bowl

Mix ingredients thoroughly by hand

Add 3/4 - 1 c. Chocolate chips, or amount to liking

Grease and flour a 9x13 Pan

Add completed batter to pan

Place pan on the center rack in oven

Bake at 325 degrees for approximately 40-45 min or until a toothpick inserted into the loaves comes out clean
